    Don’t be afraid of the poly’s. They are much better than the old ones. We have produced numerous medal winning wines (both reds and whites) using them and they are much more affordable to get your winery going. The downside that I have experienced is that they are harder to clean. Otherwise, good wine making practices will result in good wine in either SS or poly. Poor wine making practices will result in poor wine from either.
